Donna's Famous Chocolate Pie

Here’s another of Panola County’s best cooks…Donna Womack Cox. Her chocolate pie is in great demand whenever she attends a function. Of course, nobody can make it like Donna makes it, but give it a try and see what you think!

Donna’s Famous Chocolate Pie

4 tablespoons cocoa
1 1/2 cups sugar
6 heaping teaspoons flour
4 eggs, separated
2 cups milk (I use 2%)
1 tablespoon butter
1 teaspoon vanilla
1 baked 9 inch pie shell (homemade is best!)
1/2 cup sugar
1/4 teaspoon cream of tartar

Combine cocoa, sugar and flour in medium saucepan. Beat egg yolks with fork. Mix milk and egg yolks and add to cocoa mixture. Add butter. Cook over medium heat, until thick, stirring constantly. Remove from heat and stir in vanilla. Pour filling into pie shell.

Beat egg whites until foamy. Gradually add 1/2 cup sugar and cream of tartar. Beat until stiff peaks form. Spread over pie. Bake at 350o until lightly brown.
